Berry Crisp

My husband and I just had our 3 year wedding anniversary and even though he had to go to work that morning, I decided to make something a little special for breakfast. We don’t usually eat huge breakfasts but we like to start our morning off on the right food, so I whipped this little delight up and it was delicious. Granted, it was a little messy… but so worth it. If you decide to leave the tortilla whole, make sure they are small (6”) tortillas, any bigger than that and most of the berries will end up on the plate or your face.

Berry Crisp

Original Recipe by Goodies & Guests

Serves: 2

Ingredients:

2 flour tortillas

1 TBS butter or vegetable oil

Cinnamon/Sugar mixture (to taste, I like to do a 1:2 ratio)

12 oz any flavor yogurt

2.5 Cups of your favorite berries. (I used strawberries & raspberries)

1 TBS Sweetener, I like to use powdered sugar for this but honey or regular sugar also work.

Instructions:

Step 1: Preheat the oven to 350.

Step 2: Using a pastry brush, spread the butter or oil over one side of each tortilla.

Step 3: Generously sprinkle cinnamon sugar mixture over tortilla.

Step 4: If you are using big tortillas, use a pizza cutter and cut the tortillas into fourths.  (If you’re using the little guys, you can skip this step.)

Step 5: Place the tortillas on a baking sheet, careful to not let them overlap and put them in the oven for 10 minutes or until they are a beautifully crisped up.

Step 6: While the tortillas are in the oven, slice your berries and combine them with the TBS sweetener.

Step 7: Take the tortillas out of the oven and let the cool a little bit then spread with a layer of yogurt and top with berries.

    I am enjoying the berry breakfast as I type. Very yummy and it was nice to have all ingredients on hand. I used blueberry yogurt however, and though I’m sure it didn’t lessen the taste, I think your photo of the the berries and vanilla (plain?) yogurt looked more appetizing than the berries with purple yogurt.
