Pizza On the Grill

My husband and I live in oh-so-sunny Arizona which is great for 8 months a year but the other 4 months are torturously hot so we always try to get out of the 115 degree summer heat and visit my folks in Seattle, which has the best summers ever. We went out to Seattle a couple weeks ago and while there, took an “Italian Grilling” cooking class at Whole Foods. My favorite recipe of the evening was this pizza and learning how to make it on the grill. It doesn’t take a long as pizza in the oven, it doesn’t heat up your kitchen, and they are much tastier. Not to mention, people can individualize their own pizzas.

Serves : 3

Ingredients:

Flour

1 premade 16 oz pizza dough (my favorite is Trader Joe’s but any will do…the better the quality, the better the taste)

2 Cups Tomato Sauce (to make your own easy-peasy Roasted Tomato Pizza Sauce click here)

¼ Cup Extra Virgin Olive Oil

Salt (to taste)

8 oz shredded mozzarella cheese

Your favorite pizza toppings

Instructions:

Step 1: Preheat the grill to medium (low-ish) heat.

Step 2: Working with a lightly floured surface, divide the premade pizza dough into 3 even portions.

Step 3: Flatten each pizza dough (making into rounds) and dust all over with flour.

Step 4: Hold the dough round by its edge and turn it, steering-wheel style, letting gravity stretch it into a 6-inch circle.

Step 5: Lay it on the work surface and stretch it to form an 7-inch circle. Set aside and repeat the process with the remaining dough.

Step 6: Working in batches if needed (depending on the size of your grill), brush dough with olive oil and sprinkle with salt.

Step 7: Lay the dough on the grill, oil side down, and brush the other side with oil. Grill until the bottom browns (about 3 minutes).

Step 8: Using a spatula (and tongs if needed) flip the dough and QUICKLY top with pizza sauce, cheese, and your favorite pizza toppings. Close the grill lid, or cover pizza with a tent of heavy foil, and cook for 2 – 3 minutes, until the crust turns golden brown on bottom and cheese melts. (If you feel like the bottom will burn before the cheese melts, turn the grill down but leave the lid closed)

Step 9: Remove from grill and drizzle a bit of the remaining olive oil. Cut (if desired) and serve the pizzas.
